Mont Blanc is a traditional dessert served on the New Year’s table that calls for optimism
Ingredients
-5 eggs
-150g brown sugar
-2 tablespoons
rum -100g flour
-50g cornstarch
-Salt
-Cinnamon
Cream amounts
-3 tablespoons of coconut milk
-410 g of condensed milk
-Zest of one lemon
-2 tablespoons of cornstarch
-2 tablespoons of rum
How to prepare
Place the egg yolks, rum and sugar in a bowl and whisk until the sugar dissolves, then add the flour, cornstarch and a pinch of cinnamon. Beat the egg whites separately with a pinch of salt and add them to the first mixture. Pour the ingredients into a bowl greased with butter and flour, covered with parchment paper, and place in the oven at 160 degrees for 40 minutes. Leave it to cool.
How to prepare cream
Place the coconut milk, condensed milk, and lemon zest in a bowl, then add an amount of the mixture to another bowl, adding cornstarch, and mix well. Boil the rest of the milk, add the first mixture, and whisk until a thick consistency is obtained, then add the rum and leave it to cool.
Divide the cake horizontally into two parts, decorate the first part with most of the cream, return it to its place, decorate the outer layer of the cake with the remaining cream, then sprinkle with shredded coconut. It can be decorated with pieces of pineapple or cherries and placed in the refrigerator.
